Sweet Summer Sushi

This wonderful meal serves four. Prepare all vegetables in advance of cooking. Serve with nori and sesame seeds as an extra treat! Ume plum paste is also a lovely addition. Ume plum paste is a naturally fermented food to be consumed in small quantities such as 1/8 tsp or less per person. The ume paste adds the salty and sour tastes to the meal.

Ingredients

  • Cucumber & shredded carrot
  • Kale & French green beans
  • White basmati rice with cashews
  • Nori sheets
  • Sesame seeds
  • Avocado slices

 

Vegetables

  • 2 medium cucumbers peeled and seeds removed  (Cut in strips lengthwise to easily remove seeds. This will aid in digestion of the vegetable as humans can’t digest the seeds.)
  • 2 medium carrots shredded   (if organic there is no need to peel! If it’s not organic then definitely peel since it is a root vegetable and directly exposed to chemicals in the soil.)
  • 2 tbsp sunflower oil
  • 1/2 tsp mineral salt
  • 1 tsp fresh grated ginger
  • 1/8 – 1/4 tsp black pepper

 

Heat oil in saucepan and add spices, simmering until aroma comes up. Add the cucumber and stir to coat with the spices. Cook 1 minute and then add the shredded carrots and about 1/2 cup water. Stir and simmer for 2-5 minutes with lid on and then remove from heat for 2-3 minutes before serving.

  • 1 medium bunch of curly kale cut into thin slices
  • 1/2 lb of french green beans
  • 2 tbsp ghee or coconut oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp mineral salt
  • 1/2 tsp grated or powder turmeric
  • 1/2 tsp fennel seeds

 

Heat oil in saucepan or pot and add spices, simmering until the aroma comes up. Add green beans and stir to coat with the spices. Cook 2-3 minutes on simmer then add kale and 1/2-1 cup water. Stir and cover. Simmer for 3 -5 minutes until color change.

Grain

  • 1 1/4 cup white basmati rice
  • 1/2 cup chopped raw cashews (wonderful when cooked, toxic when raw)
  • 1 tbsp ghee
  • 1/2 tsp mineral salt

 

Combine in pot or rice cooker and cook until rice is soft.
