When the family gathers around the table for a delicious meal, it would be great to have a healthy, tasty vegan dish. Here’s a mouthwatering aviyal recipe, mixed vegetables in coconut cream.
This dish is famous in southern parts of India for its rich flavors and healthy ingredients.
Aviyal Recipe: Mixed Vegetables In Coconut Cream
Ingredients
1 cup carrots, peeled and diced length wise
1 salad cucumber, peeled, deseeded and cut length wise
1 raw banana, peeled, and diced length wise
1/2 cup sweet potato, peeled and diced length wise
2 green chilis
1 cup fresh grated coconut
1/2 tsp turmeric powder
1/2 tsp cumin powder
3 Tbsp yogurt (optional)
1 Tbsp coconut oil
1 spring curry leaves
salt, to taste
Directions
- Wash, cover and cook the vegetables with enough salt, half a cup of water and turmeric powder. Do not overcook or mash the vegetables.

Grind the coarsely grated coconut, green chili and cumin powder and mix together.

Add the coarsely ground paste to the cooked vegetables and simmer and cook, covered, for another 5 minutes.

Open the lid and add the yogurt and mix well. Once yogurt is added, switch off the flame.

Add coconut oil and curry leaves on the top and keep the lid closed until served. When ready to serve, mix well and serve warm.
This a simple, but tasty and nutritious recipe. The vegetables can be added according to your choice. Since it has many veggies, it pacifies all the three doshas, and is easy to digest. It’s non spicy which makes it an ideal dish for kids as well.
