Comments: Fifty-seven percent of the total fatty acids in flaxseed oil is alpha-linoleic acid (ALA), one of three omega-3 fatty acids. When consumed, ALA is converted into the other, more powerful omega-3s, docosahexaeonic (DHA) and eicosapentaenoic (EPA) acids. In a study where volunteers consumed flaxseed oil for four weeks, the ALAs significantly decreased pro-inflammatory compounds. Sesame seeds provide a good amount of Copper – 0.7 mg 35% RDA per ounce. A mineral that is important for anti-inflammatory and antioxidant enzyme systems, copper is known for reducing pain and swelling associated with arthritis. Anethole, a compound that is a chief constituent of fennel is effective at blocking inflammation. Sunflower oil is rich in Vitamin E which in turn could be effective in reducing inflammation.
